- Variety: Coratina cultivar
- Method of harvest: by hand
- Method of extraction: the milling takes place within 24 hours of collection, in order to obtain a very low acidity. The extraction takes place by natural cold dripping of the olives. The unfiltered oil is stored in containers at a constant temperature and in the absence of light and air. It is then bottled naturally.
